How can I make my own sun-dried tomatoes

my mom can grow anything i just need to know how to make them. they are the only kind of tomatoes that i like. please help

    * 16 plum tomatoes
    * 2 tablespoons of olive oil
    * 2 teaspoons of caster sugar
    * 5 sprigs of thyme
    * 4 cloves of garlic (peeled)
    * 500ml of extra virgin olive oil
    * and a generous pinch of sea salt and black pepper

    Preheat the oven to between 50ºC and 60ºC then using a sharp knife, halve the tomatoes making a clean cut down the middle.

    Depending on the size of the tomatoes you might want to cut them into quarters.

    Place the cut tomatoes on a baking sheet lined with baking parchment and drizzle them liberally with olive oil.
    Sprinkle with sea salt, black pepper and the caster sugar.

    Place the tomatoes in the pre-heated oven and leave to dry for seven hours or until most of the moisture has gone.

    Be careful to leave some moisture in the tomatoes though so they taste nice and juicy when they’ve been preserved. They should be roughly the consistency of raisins. If they’re wet and sloppy they’re undercooked, dark brown and stiff they’re overdone.

    When you think they’re done, remove the tomatoes from the oven and leave them to cool until they can be easily handled.

    Sprinkle a little salt and pepper into the jar and then add the peeled garlic cloves, the thyme and the chillies if you’ve decided to use them.

    Place the dried tomatoes into the jar and pour over enough extra virgin olive oil to fully submerse them.

    They should keep for up to six months in the fridge so long as they are always covered in oil.

    I make my own with my food dehydrator. I cut the tomatoes in 6 even slices then space them evenly on my dehydrator trays. I only use 2 or 3 trays at a time so that it doesn’t take as long to dry them. I also alternate the trays every 4 or 5 hours. It usually takes about 16 to 24 hours to dry them.

    When I do this in the kitchen I work at I put the tomatoes on a pan
    and cut little slices with a knife in the tomatoe so the juices will
    release. Bake them at about 250 until they are the way you like to eat
    them.

    this may be to time consuming for you, but it is really the best tomatoes you have ever ate. My grandmother every year would go to the hardware store and buy two new wire screens, ( not very expensive, but worth it) and slice her tomatoes, lay them on one and cover with the other. you can really use any kind of screen as long as the weave is tight enough to keep out bugs. she would them lay a clean sheet on her picnic table and put the tomatoes there in the early morning and leave them all day, turning them once or twice in the day. she would then take them into the kitchen and pack them in pint jars and add a clove of garlic and enough olive oil to cover. seal them and put in fridge. these are great! and when you use them drain off the oil and save it to cook with. Sounds just like ones you buy in store, but taste 100 times better. hope you try this and enjoy… sarah p.s. these wont be leather looking like store bought, but will taste the same
